ZAP Bites: 2017 Meal Planning

In the spirit of the New Year, I have resolved to make meal planning a priority in 2017. It will be much healthier than my traditional takeout; potentially become a fun hobby (or, at the very least, a good story); and will also be an interesting challenge separate from everyday work.

Since there’s nothing worse than grocery shopping on a weekend, I’ll most likely plan my trip for Mondays and plan through the weekend. I’m hoping to kill two birds with one stone by bringing lunch to work each day, which will also achieve my other resolution to save more money. Below are a few recipes that have already caught my eye – you’ll note that they are all beginner level and exceptionally basic for a newbie like me!

  1. Crock Pot Chicken Enchilada Soup
  1. Spaghetti Squash Burrito Bowl
  1. Donut-Shaped Apple Snacks
  1. Avocado and Grilled Chicken Chopped Salad
  1. Loaded ‘Nacho’ Chicken Tostada

Let me know in the comments if you have any other favorites that I’m missing, and happy New Year!
